Raw food

Raw food or raw food as it has mainly been called before is a diet that involves eating raw, unprocessed and often organic food, with the aim of achieving good health and feeling better. Raw foods often contain a lot of vegetable foods such as fresh fruits, berries, vegetables, root vegetables, herbs, leafy vegetables, dried fruits, nuts, seeds, grains and algae. Some raw food diets allow the consumption of all raw and unprocessed foods, thus allowing unpasteurized (unheated) dairy products, raw eggs, raw fish (such as sashimi) and raw meat (such as carpaccio), while other raw food diets only allow vegetable food.

The American term raw food has a similar older Swedish concept, live food, which was established in Sweden in the 1970s. The creator of the concept of live food was the Lithuanian-born American Ann Wigmore. She authored several books on living food and also ran the Hippocrates Health Institute, a living food institute in Boston. What unites the concepts of raw food and live food is that they both involve a type of diet where the raw materials must not be heated above 47 ° C (118 ° F) during cooking.
